Mexican Tomato Soup

Mexican Tomato Soup with Guacamole

  • 1 kg Tomatoes
  • Some small onions
  • Olive Oil
  • Seasonings
  • Lime
  • 1 ripe avocado

Heat your pan, and roast the onions in olive oil. After a couple of minutes add slides tomatoes and 1 l of water. Let it cook for around 20/30 minutes. You can add salt, pepper and your favourite seasoning, and the juice of a half lemon. In case your tomatoes are not covered with water just add some more. After 20/30 minutes remove it from heat and use a blender to create a smooth soup.

Mash up avocado, half of a tomato, some onions, olive oil, salt and pepper, to create a nice guacamole.

Garnish the soup with some guacamole and you’re ready to go. tomatoes L1020201L1020206
